Healthy Fake Eggs Benedict with Healthy Hollandaise Sauce (for 2)

For the base:

4 slices Fake Ham (Quorn)

4 portions toast (home made Sourdough Wholemeal Rye is wonderful)

4 large eggs


For the mock hollandaise:

1/2 cup (approx.) light mayonnaise

1 tablespoon butter, softened (optional)

1 Tablespoon olive oil spread

½ - 1 teaspoon sweet Paprika (to taste)


Method:

Place 1 slice of Fake Ham on each piece of toast, folded in half if desired

Poach the eggs to taste, place on the toast and Fake Ham

To make the mock hollandaise, melt the butter add the sweet Paprika and whisk the mayonnaise in until you reach your preferred consistency and temperature and pour over the eggs
